I am going to try to ask this question for my husband. He bought a mitsubishi, MS 180-3 excavator. serial # 3583 and the lever is opposite of what he is use to. He is use to caterpillar. He was told he may be able to switch hoses to run like a caterpillar. Can this be done and who would know about this. We live north of raleigh, nc.

In most cases, the hoses can be reversed, however it should be verified by a Mitsubishi service facility.
Switching the hoses does reverse the operation of the valve, but sometimes there are additional valves (in the circuit) for safety or load control. Reversing the hoses may affect those safety controls. If the excavator came with a schematic (hydraulic plumbing diagram), it would indicate those valves. If you have a schematic for the excavator, most hydraulic shops could read it and tell you if switching the hoses would be ok.
