Minerals used in heat transfer applications start around 500C if memory serves. I'd expect PAOs to be higher, but I don't know by how much.

John Micetic - Thermal cracking is typically observed in heat transfer fluids in closed systems. They are not exposed to significant amounts of oxygen, so they don't oxidize. But at a certain point, the molecules begin to break into shorter chain lengths. The two common indicators are viscosity and flash point, both which drop when the oil cracks. Operators of these systems typically 'bleed & feed' when they see this.
