Have 4 identical Diesels (SACM V 16) running Shell Rotella T 15W-40 w/XLA.

Boron runs 340 in one, and 30 in another.

Different drain times.

And I see abrupt changes. Example 250 to 10 one time.

I don't see other elements moving at the same time.

Can the additive pack vary that much or is it likely to be plating out?

Trust the changes are after an oil drain and suspect from different batches.
Would check the new oil, but most likely cause is a change in additive system.
No oil company puts all their eggs in one basket, so Rotella T will have at least 2 formulation options of similar performance but slightly different additive chemistry.(for commercial and continuity reasons)
Also as Micbial says perfomance spec may be improved version
