Grease Analysis?

We are looking into doing some basic grease analysis on site. Any suggestions as to what test(s) we should be doing?

We are purchasing a pentramometer(sp?). We have an extensive oil lab on site with most of the toys to perform oil analysis and would like to use them for grease analysis.
