i would like to measure the dielectric constant of different cooking oil samples by using a parallel plate capacitor. but the thing is i keep getting the same capacitance reading on different oils. i have read an article that as oil deteriorates the dielectric constant and total polar compound increases. i have also tried connecting the parallel plate capacitor to an oscillator but i keep getting the wrong results.
PS. i have measured my samples through a food test kit also for total polar compounds and i have different samples for each TPC range but i keep getting the same capacitance.. i hope you could help me.. thank you
