I am an experienced chemist, but relatively new to work on oils. Can anyone explain the rationale why this method uses aqueous pH standards of 4 and 11 to mark the start and end points of the titration. Why is it not the same number of pH points either side of 7, i.e. 4 and 10? Is this entirely empirical?
