From my own experience I can answer the question can vegetable oil be substituted with olive oil, it is a great replacement for vegetable oil. I use it not only for frying, but also for casseroles, baking and even in salads. The taste of olive oil, especially extra virgin, is really noticeable, but I like this light fruity shade. Of course, if you do not want the taste to be so bright, it is better to choose refined olive oil - it is much more neutral. It also does not change the texture of the dish much, so you can safely replace vegetable oil with olive oil.
